Spring Roll Night
Every Saturday is Spring Roll Night at Linh's house. Dad sets out bowls of shrimp, lettuce, mint, and thin rice noodles. Grandma fills a wide pan with warm water. Linh lines up the plates in a neat row.
"Who wants to roll first?" Dad asks.
"Me! Me! Me!" Linh shouts, waving both hands.
Grandma shows her how. "Dip the rice paper slowly. Count to three. One... two... three. Now lay it flat."
Linh piles on noodles, mint, and lettuce. Then she adds shrimp, and more shrimp, and even more shrimp. She folds in the sides and begins to roll.
Rip! The paper tears, and a shrimp slides across the table.
"Oh no," Linh says in a small voice. "I ruined it."
Grandma smiles. "It is not ruined. It is just too full. Try again, and use a little less."
Linh dips a new sheet. This time she adds only a little of each food. She rolls it tight and tucks in the ends. The roll is smooth and round.
"Look!" Linh cries. "It didn't break! Can I make the next one too?"
Dad laughs. "You can make all of them!"
