How Are Corn Tortillas Made?

Gather facts from an interview and a recipe card to answer a question.

Read the two sources

Ana wants to answer a question: How are corn tortillas made? Read her interview with a tortilla maker. Then read the recipe card her family used at home after the visit.

Ana's Interview with the Tortilla Maker

1On Saturday, Ana's family visited a small tortilla shop. The air smelled like warm corn. Ana asked the owner, Mrs. Ruiz, some questions and wrote down her answers.

2Ana: What are corn tortillas made of?
Mrs. Ruiz: They are made from a soft corn dough called masa. To make it, we cook dried corn in water. Then we grind the corn into dough.

3Ana: How do you make the dough flat?
Mrs. Ruiz: First, we roll the masa into small balls. Then we press each ball into a thin circle. At home, you can use a tortilla press.

4Ana: How do you cook them?
Mrs. Ruiz: We cook each tortilla on a hot, flat pan called a griddle. We flip it once or twice. Sometimes a tortilla puffs up like a little pillow!

5Ana: How do you keep them warm?
Mrs. Ruiz: We wrap them in a clean cloth. That keeps them warm and soft until it is time to eat.

Recipe Card: Corn Tortillas at Home

1Put two cups of corn masa flour in a big bowl. Add warm water a little at a time. Squeeze and mix the dough with your hands until it feels soft, like clay.

2Roll the dough into small balls. Each ball should be about the size of a golf ball.

3Put one ball between two sheets of plastic. Press it flat with a tortilla press or the bottom of a heavy pan.

4Ask a grown-up to cook the tortilla on a hot griddle. Flip it when the edges start to look dry. Cook the other side for a short time, too.

5Wrap the warm tortillas in a clean towel so they stay soft. Eat them with beans, eggs, or cheese!
