A Letter from Lena

1Dear Kofi,
Thank you for your letter! You asked what my mom does at work. She is a cheesemaker. She makes cheese in a big kitchen behind her shop.

2First, Mom pours fresh milk into a giant pot. She warms the milk and stirs in a few drops that make it thick. Then she cuts the thick milk into little lumps called curds.

3Next, she drains off the watery part. She packs the curds into round molds and presses them down. Each mold makes one wheel of cheese.

4The wheels rest in a cool room for many weeks. Mom often turns the wheels over. That way, both sides dry out the same. Last Saturday, she let me help. I wore a white hat and a long apron!

5When the cheese is ready, Mom sells it in her shop. People line up to taste it. What job would you like to have someday? Please write back soon!

Your friend,
Lena
