The Secret at the Bottom of the Pot
Darius pushed a chair up to the kitchen counter. His cousins were coming for dinner, and Grandma Shirin had asked him to help make the rice. "Our family's rice has a secret," she said with a wink. "You will see it at dinner."
First, Darius rinsed the rice in a bowl of cool water. He swished it with his hands, poured out the cloudy water, and did it again until the water stayed clear. Then Grandma boiled the rice for a few minutes and drained it. She melted butter in the bottom of a heavy pot and spooned the rice on top in a tall hill. She covered the pot with a lid wrapped in a clean towel. "Now we wait," she said, and turned the heat down low.
Darius waited. He set the table. He folded the napkins. After a long time, a toasty smell drifted out of the kitchen. Darius sniffed and frowned. "Grandma, I think the rice is burning!" he cried. "Should we turn off the stove?"
Grandma Shirin did not rush to the stove. She only smiled. "Be patient a little longer," she said. "That smell means the secret is almost ready."
When everyone sat down, Grandma put a big round plate over the pot. Then she flipped the pot upside down and lifted it away. The rice stood on the plate like a cake. The crust from the bottom of the pot was now on top, and it was golden and crunchy. Darius's cousins cheered. Everyone wanted a piece.
Grandma broke off the first piece and handed it to Darius. It crackled when he bit it. "This is the secret?" he asked. Grandma nodded. "The best part of the rice is the part that waits the longest."
